Mango Cucumber Salsa (just 5 Ingredients)

Mango Salsa is one of those simple and refreshing dishes perfect on a hot summer’s day!

Mango Salsa

The simplicity of the salsa, the fresh and ripe ingredients make it a perfect summer dish. The refreshing bursts of flavors really shine here! And it is also very versatile. You can mix it up and add other fruits and veggies to it. This salsa is also great as a side salad to some grilled chicken or on top of fish tacos; the possibilities are endless! 

But first, the key to a good mango salsa is a perfectly ripe mango.

How to select a ripe mango? 

When selecting a mango, you want to consider texture, smell, and sometimes color. 

Mangos that are bruised, wrinkly (except for champagne mangos) or too soft have passed their peak of ripeness.  Mangos that are firm but have some give when you press the skin and have a sweet aroma near the end should indicate perfect ripeness. Color isn't always a good indicator of ripeness, since not all mango varieties change color,  but I do like to select ones that have some yellow/orange/red coloring on at least part of the skin. And finally, mangos that are too firm will need several days to ripen. 

After you have selected a ripe mango, the rest is just putting it all together. 

You will need the following ingredients: 

  • Mango
  • Cucumber
  • Corn (cooked)
  • Cilantro
  • Lime

First, peel and cut the mango into small cubes. Cut the cucumber into small cubes.  

Roughly chop up cilantro. Add mango, cucumber, and cilantro to a bowl.

Juice lime and mix all the ingredients in the bowl.

Cut corn off the cob, and add to the bowl. Mix, and it's ready to serve.

That's it! Really!

What I really enjoy about cooking is that you don't have to stick rigidly to a recipe and can get creative by substituting and switch things around. Don’t have corn?  Fine! Leave it out or add some red peppers, or peaches instead. Don't like cilantro, swap it for an herb you do like.

This mango cucumber salsa is great on top of fish tacos or as a side salad to grilled chicken or whole roasted branzino.

Ingredients

  • 1 mango, peeled and cubed
  • 1 medium cucumber , cubed
  • 1 corn , cooked and removed from the cob
  • 1 lime, juiced
  • ¼ cup cilantro, chopped

Instructions

  • Combine mango, cucumber, corn, and cilantro in a bowl. Add the juice of a lime, mix and serve.
