Vegan Tzatziki 

Ingredients

Use the large holes of a box grater to grate the cucumber onto a dry paper towel or kitchen towel.

Grate cucumber

squeeze out the juice 

Wrap the grated cucumber in a paper towel and squeeze the excess liquid.

mixing it all together 

Transfer the grated cucumber to a bowl. Add yogurt, lime juice, salt, grated garlic, fresh dill, and mint. Combine all ingredients. 

Prep Time: 10 min

Plate and serve right away or cover and chill in the fridge for 30 minutes   Garnish with fresh herbs and a drizzle of extra virgin olive oil (optional)
