Dreaming of this beef stir fry bowl with romanesco (broccoli - cauliflower hybrid) and snap peas over jasmine rice. Oh how I’ve missed you ! 🤣 1 banana 1 green apple 1 kiwi 1/2 lime or lemon Baby kale or kale ( 2 big handfuls or 4 leaves of regular) Ginger ( about a quarter size) Turmeric (about a nickel size ) Celeriac root (about 3-4 small cubes) Parsley (a few strands) I like my shakes and smoothies thick. Need a simple weeknight dinner that the kids will eat? Try these oven-roasted honey-lemon chicken wings for the win! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I'm including a loose recipe here, but also check my story highlights for step by step instructions. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ✨Recipe 👉 -Preheat oven to 350 -Pat dry the chicken with paper towels and generously season with salt and mix. -Line a large baking sheet with parchment paper, and layout the wings in one layer (don't overcrowd the pan) - Roast for 30 min In the meantime make the honey lemon sauce -In a bowl mix a spoonful of honey, juice of a lemon and grated garlic. whisk until combined and smooth. - after the 30 min, remove the wings from the oven, carefully drain any access liquid (if any). Turn the oven up to 425 degrees - Using a brush apply sauce all over the wings. But make sure they are coated well but not swimming in the sauce. You want them to get crispy and not steam/poach in liquid. - Cook for another 15 min or until the skin is nice and browned. -Sprinkle some dill or other fresh herbs and ready to serve and eat! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Tag me if you make these. My mother isn’t a big cook. But she does have a few soups under her belt. This is a Ukrainian vegetarian green borsch (spinach soup) that I grew up with. The soup consists of very few basic ingredients like potatoes, carrots, spinach, scallions, and boiled eggs, and comes together really quickly. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I'm sure every Eastern European family has its own version, some make it with meat. No matter what your work entails, or what project you’re working on or what stage of life you are in. It can feel like you’re not doing enough , not enough progress is made. Always an endless list of things to do. Then those negatively thoughts tend to take over and you feel discouraged. Seeming like what you have done is not enough. If you feel like this or can relate. Let’s switch the script and change that. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Take inventory of everything that did work, and all the things that got completed. Before you know it, you might be surprised by how much progress actually took place. Progress is a long game so have patience. Sometimes when looking thru a narrow lens it is difficult to see the full picture. So take a breath, step back, appreciate the hard work and move forward with your goals.
